Za'atar & Birch Syrup Glazed Chicken

Za'atar is a Middle Eastern blend of spices, and easy to make.
This blend contains sumac, a spice made from crushed berries of a small Mediterranean tree. It's a dark red moist powder and adds a tangy, sharp flavour to the za'atar.


4 organic chicken breasts
Za'atar spice blend (see below)
Birch syrup
Olive oil


1 tbsp sesame seeds
1 tbsp sumac powder
1 tbsp dried thyme
1 tbsp dried oregano
1 tsp cumin
1 tsp sea salt
Grind to a powder in a blender or with a pestle and mortar
Pre-heat  the oven to 200 degrees C.
Coat 4 organic skinless chicken breasts in the za'atar and a little olive oil and place in a baking tray and put in the oven
To make the birch syrup glaze mix 4 generous tbsp of birch syrup with 3 tbsp of vodka.
After 15 minutes baste the chicken breasts with half of the birch syrup glaze, turn the chicken breasts over and put back in the oven.
After another 15 minutes add the remaining syrup glaze, turn and cook for another 5 minutes or until the chicken is nicely browned on top, but there are still lots of juices.
Serve the chicken and its juices with rice and lots of veg!
