Birch and Banana Loaf
Ingredients
200g Self Raising Flour
125g Demerara Sugar
1 x 2.5ml spoonful of salt
75g x Butter or Margerine
2 x Medium Eggs
1 x 15ml spoon Birch Syrup
450g x Banana Spread / Jam
1 x 15ml spoonful of milk
Method
1. Mix together flour, sugar and salt. Rub in the butter / margerine.
2. Mix in eggs and Birch syrup.
3. Mix the banana jam with milk and add to the mixture.
4. Place mixture in a well greased 1kg loaf tin.
5. Bake for 1.25 hrs at 180 degrees C.
6. Cool on wire rack.
7. Wrap and keep for 24 hours before slicing.
